SABORES DO ATLÂNTICO
JANEIRO Restaurant presents the gastronomic festival SABORES DO ATLÂNTICO. In each edition, our host chef Morena Leite invites a chef from the Brazilian coast to create a collaborative menu.
From Pernambuco and specialist in Garde Manger, Renato prepares sauces, cuts of meat, vegetables, fruits and special cooking techniques. In addition to his local references, he is also passionate about Mexican and Mediterranean cuisine.

Pirarucu ﬁsh tartare scented with orange & coriander seeds, sage & thyme olive oil and crispy curd cheese
Scallops carpaccio with tomato chutney, green olive powder, black roes, sprouts & croutons
Glazed shrimps & octopus in dark tupuci (tradicional manioc syrup from Amazonia) served with sweet potato purée topped with grilled chilly peppers and citrus manioc ﬂour crumbles
Banana scaled Robalo ﬁsh served with tradicional Brazilian crab broth
Guava miles-feuille with Brazilian cream cheese and alfenim (hard sugar) brûlée & dark grapes ice cream with crunchy manioc cake
